Last summer, I spent a day helping to can peaches. My job was to wash the peaches, then blanch them for forty seconds before plunging them into cold water. I also peeled and cut some of them and put them in the jars. Others prepared the syrup and placed them in the canners. I felt like I was living in a different era, but it was fun, and the results are delicious!
